A brief history of the crisp, crescent comestible we all know and love is a tale full of culinary legends.

The French have a whole lot to do with the croissant as it is known today. Other familiar laminate doughs are puff-pastry dough and Danish dough.

When you think about a fresh, flaky croissant, you probably conjure up images of Paris. That warm, buttery croissant. Crispy on the outside, light and fluffy on the inside. Enjoyable on all sides and in every way imaginable. Go deep.

And yet for years, food historians have disputed the origins of the croissant: is it truly a French pastry? The legend takes place during the Ottoman Turk siege of the city; a baker apparently heard the Turks tunneling under the walls of the city as he lit his ovens to bake the morning bread.

Croissants and other viennoiserie are made of a layered yeast -leavened dough. The dough is layered with butter , rolled and folded several times in succession, then rolled into a sheet, in a technique called laminating. The process results in a layered, flaky texture, similar to a puff pastry. Crescent-shaped breads have been made since the Renaissance , and crescent-shaped cakes possibly since antiquity. In the late s, the development of factory-made, frozen , pre-formed but unbaked dough made them into a fast food which can be freshly baked by unskilled labor.

If you ask a person the country of origin of the croissant, a huge majority will probably say France without a moment of hesitation. But is that actually true? First of all, the delicious pastry is called viennoiserie. But what is the origin of this delicious viennoiserie? In English, the word translates as pastry.
